So I have time for a bento

Hello,

School holiday is coming...!
Kids will have approximately one month of school break.
Hm..is it comparatively shorter than your summer break? hehehehe.

So, since they are happily to lie longer on the couch *I limit their TV watching session during school days* I find myself to get more of my bento lunches :D

Here is one for breakfast 


Inside the first tier:
Fresh salad from lettuce, orange pepper bell, cherry tomatoes and edamame.
Just sprinkled them with salt, pepper, a splash of lemon and olive oil.

Inside the second tier:
Pan fried Japanese tofu and boiled purple sweet potato
Sprinkled with furikake
Strawberries
Soft boiled egg

I love love love soft boiled egg
I can have it for breakfast and dinner. When I do not feel like to cook, I can eat it with a toast and whatever jam available in my fridge. 

I usually put the egg in a pan full of cold water, before to put them onto fire.
I once let the water boils before dropping the egg. Hm...the egg cracked and I got a hard boiled egg then. I realized the mistake, the egg wasn't in a room temperature. It came straight from the fridge. No wonder it cracked! Now I let the egg to rest a while before to put it into a pan.
When the water boils, I use a timer (or a smartphone!) to wait for 3 minutes. Switch off. Empty the hot water in the pan and re-fill with cold tap water to cool off the egg for a few seconds. I will still get the runny yolk :) yummm..

Speaking about my detox program

Hi and how are you?

Since early May, I have decided to get into a detox meal plan. Well, actually it is a low carb diet. Yup, it is a kind of diet that hubby went into some time ago. Here are the stories, in his diet . I have posted several of his menu as well in low carb story continues and his latest menu

I have heard some mixed inputs from him while undergoing this program. That made me think, perhaps I should give it a try. Just to have an experience. So I can talk as an insider and no longer as a 'commentator'

So, my above-said intention received a frown in his head and short reply "you certainly do not need to do that"  It is understood since I am in pretty normal condition and my friends tend to call me "skinny". Besides, I am a meatless person too. I am sure this particular fact is included into his point of objection. But...the decision is made and I am stick with it. It will be proven that if a meatless person like me can do it, any average normal people can do it too :b

I did not plan to follow the whole program, but the two-weeks detox session. Meaning, within 2 weeks time, I can't have carbohydrate and sugary foods. That include rice, potato, pasta, noodles, cakes (ouch!), bread, soft drinks, all fruits, chocolate (ouch again!). No sweet soy sauce. Basically what allowed are proteins. For him, skinless meat and seafood are acceptable, not in deep fried though. Comparing to his, my meal option is much limited. I imagined that I will regularly eat much of veggies (carrot is not one of them, since it contained sugar), legumes/nuts, white egg, tofu and tempeh (soy bean cakes).

The kind of suggested exercise is brisk walking.

Actually the program has much more details about the do and the don't than mentioned. However, I only wish to share the foods that I have been having. 


Inside the box
Clockwise: 
* Boiled edamame
* Green salad of broccoli-zucchini-cauliflower-green peas-yellow paprika without any dressing but gari (pink ginger) in two compartments
* sauteed (using splash of canola oil) white cabbage with button mushroom, egg white and gari.
* Korean dry seaweed, immersed it into boiled water for a while until tender, strained and mixed it with a bit of salty soy sauce and sesame seeds.

Simple? yes 
I need to keep it that way, since myself prepare the meal right before leaving to office.

That menu is only one of the example and my meal do not vary much. I just kinda mixed and match the menu with pan-fried Japanese soft tofu or white egg omelette (delicious with furikake!) or pan-fried tempeh. Sometimes I also put feta cheese instead of gari into green salad. Just to get some alternatives. The quantity is enough for my 3-times meals and in between meals, I take edamame as my snack. That keeps me full all the time. When I am really feel like snacking, I will take low fat plain yoghurt or unsweetened soya drink or a portion of pistachio nut will save my day too.

If you wanna know, today is my eleventh day. Yay...! 3 more days to go.

The first and second days, I felt so sleepy during mid-day. Perhaps due to the decreasing of sugar level. My mouth felt so dry, seemed like craving for sweet stuff. Few times I told myself "focus.. focus.." LOL. I do not mind about the absence of carbohydrate, but it is really tough for me to eliminate the sugar in my meal. I love the cookies, brownies, ice cream and those beautiful (cup)cakes ... eeeww..STOP IT!!

After the third day, it completely normal for me. I do not have mood swing too. Nevertheless I have warned my close pals in office "don't mess around with me. I may be very sensitive due to lack of sugar" in joking tone before day one. 

Well, everything turn out to be just fine.

The program advised us to have body measured on prior to start, seventh and fourteenth day.  So, on the seventh day, I dropped two kg in weight and one point in visceral (belly) fat measurement.
Yup, my pants feel at loose.
Losing weight is not my goal, unlike my hubby's, but it is a supportive act from me.
But I will re-measure on the last day because what gets measured gets done :) and I will let you know the result *wink*

The funny thing is, I feel more energetic. Also get much less pimples on my face. 
Hooray for that!

Important note, consult and follow a nutritionist when you want to do it.
Yes, I obey mine as well.

His latest menu

Last week I was tied up with my son. 
He underwent an appendectomy. Thank God it went very well. I will post the complete story in different post.

However, hubby is still going for his low carb diet. 
I didn't have a choice but to tightly manage my time.

Few of his menu that I've captured

What's inside:
* Halved-boiled eggs, removed the yellow, to fill in the sauteed ground beef with red beans
* Stir-fried green beans with baby corn
* Steamed tofu with salt pepper, basil leaves, red chilli and edamame
* Pan-fried boneless skinless chicken breast with dried herb

What's inside:
* Ratatouille - omit the tomato

* Mini tempeh burger

* Shrimp Scampi - omit the dry white wine and butter

* Stir-fried broccoli with mushrooms and onions
* Steamed chicken (Pepes Ayam) - omit the tomato

* Pan-fried salmon with lemon and dried herb
* Fried rice with egg, vegetarian ham and frozen veggies --> this is mine
* Watermelon, strawberries and blueberries

He will finish Step One very soon
Later, I will have more options of ingredients to cook. Yay...!

Low carb story continues

Hello...

I am still supporting hubby in his low-carb meal

Just realized the appropriate term is low-carb -instead of carb-free- I will use it from now on. So, another thing to realize, the key to have tasty meal is to use many herbs.

What's inside:
* Gindara Fish (I do not know English name for this kind, feel free to let me know)
 pan fried, with salt, black pepper, grated ginger. Fried under splash of canola oil.
* Steamed egg white in glass-cup
Whisked 3 eggs (I got two cups) mixed with button mushrooms, ground lean beef, cubed yellow and red bell pepper, minced leek and some basil. Salt and pepper of course.
* White tofu
Steamed (once again) soaked with few drops of olive oil, grated garlic, minced leek and minced red chili pepper, aside from salt and pepper.
* Blanched broccoli and button mushroom for garnish.

I would love to eat it by myself

Bento - some late posts and his diet

Hi there,

The net connection was down since last Monday.
I wonder why it has problem when I had many things to post. LOL

Well, to begin with, I made bento for kids' late lunch during last weekend. 
I made an extra box -just like this one- for a friend since we visited their house for playdate.

What's inside
Baked salmon in alu foil, blanched broccoli, fried rice, Hello Kitty kamaboko and apples.

Lately, I love to bake this and that.
For salmon, I rubbed it with salt, pepper and mixed dried herb (parsley, oregano, thyme - didn't notice what else inside- found this ready bought package in a supermarket). I drizzled the salmon with olive oil and inserted a sliced of lemon on salmon, just between the skin and alu foil. I did it all onto foil surface, then just wrapped it and put into the oven. Using 200 C in about 20 min, the salmon will be done and smell wonderful.

In middle of baking time, I put sliced red and yellow bell pepper in tin pan next to the wrapped salmon in oven.

While waiting for the salmon, I made fried rice. Simply done, using white rice, some bites of vegetarian ham, egg being scrambled and shredded bell peppers. At the same time, Hello Kitty kamaboko and edamame were being boiled, also some sliced apples being soaked into salty water.

When all done, put salmon, bell pepper, broccoli, lettuce, fried rice, edamame and apples in place. Voila! it's so yummy {^,^}

Bento for some lazy busy mornings

Remember my story about the Bakery and Meat shop
I got some chocolate rolls and croissants in store, frozen of course. They needed to be re-heated by oven within 5 minutes on 180-200 C.

What's inside
Chocolate roll, butter croissant, a cup of sliced rock melon and grapes, two quail eggs, purple sweet potato and garlic n herb butter in tiny cup. 

I let the kids know that they can smear the butter onto croissant. They came home and told me that some of their friends have bits of croissant. Some preferred the croissant while others preferred the butter. Some even said to my kids "you always have the 'strangest' lunches" I take that as a compliment \>,</

As a bonus, mister J loved his lunch. 
He normally didn't like to find bread in his box.


Last one for today, I promise.
Hubby is thinking to get himself into a diet program. Well, it is about time, I suppose. He is currently very overweight. Although looks healthy, I am deeply concerned for his general condition in the long run. I couldn't force him to change his way of eating until he decides himself to do so.

A type of diet that he is considering now involving 2 steps.
First step is to have 2 weeks free of carbohydrate meals. Meaning, yup..no carbohydrate at all, including pasta, potato, and friends. Fruits are out from meal-plan too. Basically, vegetables (except carrot and tomato), legumes, olive/canola oil, white egg and other kinds of protein (like tofu, tempeh, we have the list) are allowed. Oh yes, no sugar too! You can cross out tea and coffee, only plain water. You can have garden salad without dressing. Looks tough? How about if I say, you can get rid from 4 to 6 kg of your weight, within 2 weeks time? \^o^/

I do not yet put too much attention for second step, since he is in doubt if he can manage first step very well. He is quite hooked with carbohydrate, none of his days will be passed on without any white rice or noodle. So....he is not firmly decide yet to follow the program, but he would like to try.

What's inside
Baked skinless boneless chicken breast (using the same method as salmon's on above-omit the lemon), stir-fried (with just some drops of oil) veggies: green beans, baby corn, yellow and red bell peppers, steamed white egg with frozen corn and green peas in papercup, some edamame and lettuce.

Both stir-fried veggie and white egg were seasoned with a pinch of salt and pepper only.
I added both yellow and red bell pepper to give a color highlight (carrot is usually my rescue) otherwise his box will be too dull.

It looks yummy. 
It smells delicious  
Most importantly, he loved it *yay...dancing around the kitchen*
So, if he sees carb-free meal isn't so bad, perhaps he will SERIOUSLY consider the program. Hahaha...
When he says yes, I will partly participate just to support him.
I don't have problem with my weight and to get carb-free meals but I care so much for sweets. When the time comes, ehm..bye bye my cappuccino and cheesecakes...Ouch!
